To kick your cheese course up a notch, open a bubbly. Tonight we’ll pop the cork on a couple of fine sparkling wines and sample them with cheeses that rise to the occasion. From triple crèmes to aged cheese to buttery blues, many cheeses love that effervescence. We’ll taste five cheeses that I consider slam-dunk matches for sparkling wine, whether your budget calls for cava or allows for Champagne.
