Truffle Cheese

Does the world need another truffled cheese? Well, maybe this one. It’s Spanish, from goat’s milk, and new on the scene—just in time to add some love to your Valentine’s cheese board. Try it shaved—it feels like a silk handkerchief. Grate it for fondue, happy hour panini or asparagus risotto. A truffled cheese omelet speaks to me, needless to say. Truffles, bubbles and cheese—that’s my love language.

The Truffle Kid™ is a six-month-old wheel from the same producer that makes Naked Goat and its wine-soaked twin, Drunken Goat. Despite the goofy name, Naked Goat is serious cheese, known in Spain as Queso Curado de Murcia. It has PDO status—a controlled appellation—and is one of Spain’s most distinguished goat cheeses.

Champagne ready: Panini with truffle cheese

The Truffle Kid™ is Naked Goat injected with black truffle paste, with more paste rubbed on the outside. Subtle it’s not. The truffle is pronounced, reminding me of Colette’s diva-worthy pronouncement: “If I can’t have too many truffles, I’ll do without.” Coupled with Naked Goat’s creamy texture and mellow sweetness, the earthy truffle is appealing—more so, I think, than it is with tangy young goat cheese.

I’m anticipating some tasty experiments with this cheese, exploring whether the truffle aroma persists when used in gougères or stirred into polenta. (Update: It makes amazing polenta.)
