At my house, we enjoy the year’s first asparagus with nothing but olive oil and salt. I like the Goldilocks spears—not too thick, not too thin—and I eat them with my fingers. But after a couple of these keep-it-simple encounters, I’m ready to change it up and, naturally, cheese is my go-to.

Six Ricotta Dishes to Make Before Summer Ends

We’re having a pesto marathon at my house. Tonight…and tomorrow night..and the next night. The garden basil is out of control and it’s now or never for the year’s sweetest pesto. I had made pesto for decades before discovering what a spoonful of ricotta does for it. So creamy! Fred Plotkin, the author of the bible on Ligurian cooking (Recipes from Paradise: Life and Food on the Italian Riviera), assures me that ricotta is a legitimate addition, although he would probably say I use too much. (I live on Planet Cheese, after all.) Try my way and let me know what you think.

Dinner’s Ready

In the Napa Valley, where we are sheltering in place, caterers are delivering cassoulet to people with deep pockets. The rest of us are plundering our pantries, gardens and freezers. Frankly, I’ve always enjoyed the challenge of making do in the kitchen. What tasty thing can I concoct from the bits and pieces? Being resourceful feels good, especially now. With my own hands, I can feed my household. I remember an elderly Italian friend who lived through the Second World War telling me that the rural people were better off than the city folks because the people in the countryside knew how to forage. Feeding yourself is a basic life skill, and this crisis is revealing that a lot of people can’t.

Show Mom Some Cheese Love

My dad made my mother breakfast in bed every Sunday. It wasn’t fancy—Bisquick biscuits, scrambled eggs and canned orange juice—but she wasn’t picky. She got to lie in bed for a quiet hour or two with a tray over her lap and the Sunday paper and her coffee. I’m pretty sure it was the highlight of her week. If you’re within cooking distance of your own Mom, or your kids’ Mom, consider pampering her on Mother’s Day with a warm, cheesy frittata. Whether served in bed or at the table, it’s a treat.

Make Mom a Ricotta Frittata

And if Mom is far away on Mother’s Day, then make it for you. Fresh fava beans are fleeting, and now’s the moment. I also make this frittata without them, but don’t favas make everything better? Leftover frittata (not that you’ll have any) makes a great sandwich. Add a swipe of mayonnaise and a few soft leaves of butter lettuce.
