What Perfect Tastes Like

Apart from their mutual fabulousness, these two cheeses don’t have much in common. One is German, the other Swiss. One is creamy, one is firm. The German cheese is a new creation, the other a venerable classic, from centuries-old methods that hardly budge. But both are examples of masterful cheesemaking, standard bearers for their style. Tasting the greats is how you develop your palate, so I hope you’ll seek out one or both of these impressive imports.

Behave Yourself!

Several years ago, I spent a day behind a busy cheese counter, just for enlightenment. My dad was a retail merchant, but I apparently did not inherit that gene. The cheese store’s customers drove me crazy. I left with renewed respect for the smiling cheese-counter people who put up with our annoying requests and quirky behavior. Today, it’s their turn. I’ve asked a few key retailers about the customers they like best.

Blockbuster Cheese

You’re not imagining it. Burrata is everywhere.  A cheese that almost nobody knew 20 years ago (even in Italy) is now summer’s blockbuster. Retailers struggle to keep it in stock, and chefs have taken it well beyond the predictable insalata caprese. What else can you do with this dreamy dairy queen?

Cheese for the Record Books

Biggest cheese ever? I would have nominated the 400-pound Crucolo, a cow’s-milk giant from Northern Italy. I’ve never seen it but maybe you have. This massive mamma steals the stage every December when the owner of a Concord, Massachusetts, shop parades it through the streets. A wheel is coming to the West Coast next week, so more of us can see what a cheese that weighs as much as two large men looks like. But, alas, it’s not the world’s biggest.
