Cottage Cheese is Having a Moment

Because my mom was on a diet her entire life, I grew up with cottage cheese. I didn’t dislike it, but I definitely associated it with deprivation. That was then. Today, cottage cheese is a TikTok phenom, with hundreds of millions of views and counting.

Needless to say, it’s never not American Cheese Month at my house. But in May it’s official. This is the month when cheese merchants give American cheeses extra love—with tastings, cheesemaker appearances, special pricing and other incentives to get you in the store and buying domestic. Keep your eyes out for any festivities or promotions where you shop.

Do Good, Buy Cheese

Don’t you love it when you can do good by buying something you were going to buy anyway? Until the end of the year, the Whole Planet Foundation is donating a portion of its sales of Good Culture cottage cheese to fund microloans to entrepreneurs in impoverished communities around the globe. I had already fallen for this creamy cultured cottage cheese, but now I love it more.

One positive result of this unsettling time is that more people are cooking at home. I’m hoping that becomes a habit even when it’s no longer necessary. Hunkering down, we need nourishment and a kitchen that smells great. We need dishes that are easy to prepare with ingredients that are easy to find, recipes that deliver a lot of pleasure for the effort. I’ve chosen six favorites from my archive to share with you.

Spring. Not a moment too soon. I’m dreaming of fresh cheese and fava beans, those first-of-the-season moist favas that hardly need cooking. I slather the cheese on toast and spoon the warm favas on top. Herbs of choice. As long as favas are in season, this is the go-to app at my house. (Asparagus works, too). The recipe is from my beautiful new book, Wine Country Kitchen.

It has been raining here in Napa (hooray!) so I’ve had time for some rainy-day projects, like homemade cottage cheese. I had forgotten how easy it was, and how delicious. Twenty years ago, Sue Conley—the co-founder of Cowgirl Creamery —shared her stovetop recipe with me. I made it then, used it for a story in the San Francisco Chronicle and then forgot about it.
