One of these years, I’m going to take a clicker to the Winter Fancy Food Show so I can count exactly how many cheeses I sampled. Sixty? Seventy? My self-discipline melts like hot mozzarella at this three-day extravaganza. I’m looking for trends and the next big stars, so I soldier on. Eighty cheeses?

Will 2019 be the Year of German Cheese? You read it here first. France, Italy, Spain and Switzerland keep U.S. cheese counters bountiful, yet German cheeses account for barely a blip. (Let’s put aside Cambozola, the supermarket staple.) But if the exquisite cheese pictured above is any indication, Germany’s cheesemakers have the milk, the know-how and the respect for tradition to create some real dazzlers.

 This new cheese reminds me of why I really shouldn’t leave the house without makeup. Mom always said, “It’s what’s on the inside that counts,” but the truth is, appearance does matter. How else to explain why this fabulous cheese languished in the U.S. until the producer got the idea to coat it with herbs and flowers? Since then, the sluggish sales curve has spiked. Where’s my lipstick?
